Our meats


Only the best from all over the world

For us at Rigamonti, the quality of raw materials comes first. To produce our Bresaolas, we choose only the noblest cuts of the best meats available in the world, mainly coming from South America, United States, Europe, and Italy.

Then, we add an ancient and traditional know-how passed on through generations, made of the typical craft works of its birthplace: Valtellina. The encounter between excellent meats coming from different parts of the world and Valtellina tradition creates several and different products in terms of organoleptic profile and taste: from Bresaola della Valtellina PGI to Black Angus Bresaola and to 100% Italian meat Bresaola.


Bresaola della Valtellina PGIThe raw material used for Bresaola della Valtellina PGI mainly comes from South America and particularly from Brasil, because there we found the best quality meat available in the market. We have been doing this since the 1960s, when Bresaola started being appreciated in Italy and abroad, but the national market couldn’t guarantee the quantity and quality of the raw material needed to meet the increasing demand. For this reason, Emilio Rigamonti travelled around the world in search of the best heads of livestock, arrived in South America and, in Brasil, he found an excellent bovine: the zebu.
Its quality toned and very lean meat – with less than 3% fat – is ideal for Bresaola della Valtellina PGI. The tone and leanness of this meat are given by the DNA of this animal, but also by the free-range and grass-fed breeding of at least 18 months. Whoever enjoyed Bresaola in the last decades probably tasted one made from zebu “punta d’anca” cut.

Given the great success among consumers, the quality standard of this meat became a reference point in the product specifications of Bresaola della Valtellina PGI. Fine raw materials and a production technique deeply rooted in Valtellina territory are the secrets of Made in Italy cured meats excellence.

Our suppliers


Monitored, certified, guaranteed

We only choose those suppliers, abattoirs and breeding farms providing specific traceability assurances complying with Italian and European Laws. We share formal agreements with our suppliers obliging them to demonstrate the traceability of animals. Moreover, we visit the companies and breeding farms we import meat from, and our supply chain is certified by CSQA, an independent body among the most important at international level, which also certificates the most important Italian PGIs and PDOs. This way we can ensure the compliance with the absolute excellence standards that characterize us and with the strictest hygienic and quality standards.

Since 2015, our experts have been doing regular audits to assess the traceability of the heads of livestock and to certify them as BAPA: “Bovini Allevati al Pascolo e all’Aperto” (Free-range and Grass-fed Bovines). This standard certifies that all animals are free-range, free to graze in huge areas, and fed only with grass for at least 18 months and then with selected and controlled fodder. This certification is released by CSQA and we obtained it due to the raw materials used to produce Bresaola della Valtellina PGI and Carpaccio di Bresaola.

Moreover, following an agreement with Coldiretti, to boost the growth of a local quality supply chain, we were the first who produced, in 2017, a Bresaola made with the best meat from bovines born, bred, butchered and cut in Italy. Rigamonti 100% Italian meat Bresaola is the unique with CSQA certified traceability in all phases of the supply chain and was born from the food culture deeply rooted in our valleys to offer the taste and quality of a Made in Italy product. The Rigamonti 100% Italian Bresaola is a project aimed at supporting Italian breeding farms by using all the available national raw materials to produce Bresaola. That is also why our company is part of Filiera Italia Association.

Seven quality certifications at all levels

Our company can boast a unique certification level in the whole sector for its raw materials, and not only that.

BAPA

(Free-range and Grass-fed Bovines)
This standard certifies that each head of livestock is free-range, free to graze in huge areas, and fed only with grass for at least 18 months and then with selected and controlled fodder. This certification is released by CSQA and we obtained it due to the raw materials used to produce Bresaola della Valtellina PGI and Carpaccio di Bresaola.

100% ITALIAN MEAT

IFS

The International Food Standard (IFS) is a food safety standard acknowledged by the Global Food Safety Initiative (GFSI) both in Europe and in the rest of the world. Its aim is to promote the effective selection of food suppliers in the large-scale distribution according to their ability to guarantee safe products complying with contract specifications and law requirements.

PGI

Rigamonti is part of the “Consorzio di tutela bresaola della Valtellina”, born to promote, give value and protect this product from counterfeiting and unfair competition. Bresaola della Valtellina bears the Protected Geographic Indication brand: it is given by the European Union and can only be used by the certified producers of the Province of Sondrio who follow the rules set by the Product Specifications. The document approved at European level guarantees that companies comply with strict safety and hygienic quality standards in all production phases. Rigamonti Bresaolas have the PGI brand but also other certifications confirming the excellence of our work.

UNI EN ISO 14001

We are the only Bresaola producers having this certification. The UNI EN ISO 14001 international standard certifies that Rigamonti implements an environmental management system aimed at preventing pollution and reducing waste quantity, energy and natural resources consumption that is constantly and coherently implemented in an effective but most of all sustainable way.

HALAL ITALY

It certifies the Made in Italy excellence products complying with Islamic lawfulness (halal) in food processing, cosmetics, health, pharmaceutical, financial and insurance sectors.
